How it's made

From the weighbridge to the jug, in a single day

A stream of green oil pouring from the steel pipe of the decanter into a bucket
No more mats and presses here: this is how the oil comes out of the decanter, green and cloudy, in the first days of the harvest.
  1. Weighing and washing

The olives are weighed, the leaves removed and then washed. Tree-picked and ground-picked go separately.

  2. Crushing

The hammer mill turns the olives into a paste, stones and all.

  3. Cold malaxing

The paste is slowly mixed for about 40 minutes, always below 27 ºC.

  4. Decanter and storage

The centrifuge separates the oil, which then settles in steel tanks.

Groups and schools

From November to January we show schools, associations and groups the mill at work, on weekday mornings.

It takes an hour and ends with toast drizzled with new oil. Give us a call and we'll find you a day.
